Quince. BlackBerry. Bing cherry bbq. Blueberry bbq. Literally anything that will add sweetness and acidity. Bonus points if you can work a little spice in there also.

apple butter… a bit more interesting

I’d water that jam down then add an herb basil, rosemary, thyme while reduced in to a sauce. You could spice it up and add jalapeno or Cayenne pepper.
DavydBlack
Apple chutney maybe? Or onion jam

OMG, don’t. This is very close to an iconic Wawa gobbler except with pork. Add a little mayo and drizzle a little gravy.

Pomegranate or mango, but perfect as is.

Apricot.

I’d put Craisins in the stuffing. Then, top with sauteed apple slices with rum. Consider also adding maple onion jam.
Strawberry jam and Cholula? (I like that with mozzarella sticks, maybe it would work for this)

I’ve never sous vide pork chops. Does the meat have that ‘squeaky’ texture of a fried chop? I’m definitely going to try them. Maybe it will convert my wife if they are really tender.

Nothing. Cranberry sauce is far superior to applesauce as a condiment

Love all these ideas. Jalapeno jelly was another thing I thought about. But you guys are giving me some good ones!!!! 🤩
I’d leave the cranberry and add either chipotles or habaneros. Maybe both.
I just licked my screen. It was not delicious. These are my favorite flavors.
Apples sautéed then add a shallot, a bit of Dijon, chicken stock, a drop of soy sauce and a pay of butter off heat.
My most requested sous vide dish is pork chops. 1 hour at 136 degrees and then sear them. Here’s how I top them. Cook 3 slices of bacon on the stovetop but remove the strips and set aside when about 60% done. Sauté half a diced onion in the bacon fat until soft. Cut the bacon into small pieces and add back in. Also add 1/2 cup apple cider vinegar and 1/2 teaspoon of ground cinnamon. Stir frequently until it cooks down somewhat toward a gooey consistency then add the sweetener of your chose (I use liquid stevia 30 drops, but it’s up to you) It needs some significant sweet to counter the vinegar tart but the balance is even better than apple sauce. Spoon the apple bacon onion jam on top and serve.
